Often these beverages get a bad rap because of the overly sweet versions found at most coffee shops. However, creating a drink from scratch means you choose what’s in it, making it truly good for you! Because of this, you don’t have to feel bad about enjoying them more often.
Every year as the cooler weather settles in the world gets extremely excited about pumpkin spice lattés and other fall drinks. I didn’t get the hype for several years until I made one myself, but after that, I was hooked. It started with a raw milk version but I decided to create a paleo pumpkin spice latte version that my dairy-free friends could love and enjoy as well.

For days when you want an extra boost, make your paleo pumpkin spice latté bullet-proof style by adding coconut oil and butter! If you want it to truly be Paleo, leave out the butter. Either way is delicious! Here’s how Beth makes her “bulletproof-ish” coffee. (No MCT oil, just simple, whole food ingredients.)
Unlike what some people claim, at Red and Honey, we don’t think that a bulletproof coffee is going to give you all the nutrients you need to get you through the day, so we suggest that you pair it with something with protein, like these Pumpkin Spice Coconut Flour Muffins.

Paleo Pumpkin Spice Latte
Ingredients
- 1 can coconut milk whole-fat
- 2 cups strong coffee
- 1/4 cup pumpkin puree
- 1/4 cup maple syrup
- 2 tsp pumpkin pie spice
- 2 tsp vanilla extract
Instructions
- Heat the coconut milk in a small saucepan.
- While the coconut milk is heating, mix the pumpkin puree, maple syrup, pumpkin pie spice, and vanilla extract in a small bowl, making a paste. Wisk into the coffee.
- Once the coconut milk is warm, froth with a frother or in a blender.
- Pour the coffee mixture into two mugs, then add the frothed coconut milk, top with whipped cream and extra pumpkin pie spice if desired.

Bullet-Proof Style Pumpkin Spice Latte
Ingredients
- 1 can coconut milk whole-fat
- 2 cups strong coffee
- 1/4 cup pumpkin puree
- 1/4 cup maple syrup
- 1 Tbsp collagen hydrolysate (optional)
- 1/2 Tbsp butter
- 1/2 Tbsp coconut oil
- 2 tsp pumpkin pie spice
- 2 tsp vanilla extract
Instructions
- Heat the coconut milk in a small saucepan.
- Add the remaining ingredients to a blender.
- Pour in the warmed coconut milk. Blend on high for 30 seconds to 1 minute, or until everything is incorporated and frothy. You can also use an immersion blender to mix the latte instead.
- Divide the latte between two mugs, top with whipped cream and extra pumpkin pie spice if desired.
