This simple and delicious fried dandelion flower fritter recipe makes a tasty snack out of a backyard nuisance, packed with iron, plus vitamin A and C. You'll appreciate dandelions in a whole new way!
1cupflour(see notes below for gluten-free substitution)
1cupmilk
1large egg
1teaspoonbaking powder
heat-tolerant oil for frying(see notes)
1cupfreshly picked dandelion flower heads- they must be used immediately after picking, or the flower heads will close up.
Instructions
Whisk all ingredients together, except for the dandelion heads, including flavour option add-in (see below)
Dip the dandelions in the batter
Fry in hot oil, flower side down
Flip and fry some more
Drain on a towel and serve hot and crispy

Gluten-free dandelion fritters:You can make these gluten-free with several different flour types. You can use a gluten-free all-purpose blend, or you can mix your own. I highly recommend ensuring there is rice flour included in your blend as it gives the best crisp finish in a fried GF batter. My favorite: 1/2 cup sorghum, 1/4 cup tapioca starch, 1/4 cup rice flour.Oil:Our favourite is cold-pressed coconut oil. You want about 3/4 to 1 inch of oil in your pan, so your oil amount will depend on the size of pan you use.Flavour add-ins:Savory: (1 tsp. salt + 1 tsp herb blend such as Italian, rosemary, or a masala mix. Dipping sauce if you like such as sweet chili or guacamole)Sweet: (2 tbsp sugar/honey, 1 tsp vanilla, ½ tsp cinnamon. Granulated sugar to roll hot fritters in).I’d LOVE to hear if you try these out!
