Maple and Shredded Coconut Granola

The beauty of this is its diversity, you start with six basic and wholesome ingredients, and customize as desired!

  • 1 /4 cup coconut oil
  • 1 /3 cup honey
  • 2 T or more maple syrup (I just scored some from our local farmer's market!)
  • 3 cups oats
  • 1 cup roasted almonds sliced, slivered, or whole
  • 1/2 cup unsweetened shredded coconut


  • Melt the coconut oil in a pot and add honey and maple syrup.
  • Add oats, almonds and coconut.
  • Stir.
  • Spread a thin layer on baking sheet (lined with parchment paper).
  • Bake at 300F for 12 minutes or longer if you like it crunchier like me.
